There’s a running joke in my house about me overfilling wraps, sandwiches, quesadillas, tacos and burritos.. you name it – anything I get to assemble myself gets stuffed to the brim!

For this lunch wrap, I squeezed in as much as I could…
Rainbow Veg Wrap
- 1 wholemeal or multigrain wrap
- 1/2 avocado mashed
- 1/4 cup hummus
- 1 handful kale washed and chopped
- 1/4 medium red pepper washed and sliced
- 1/2 medium carrot shredded
- 1 handful red cabage washed and sliced
- 4 pieces semi-dried tomatoes sliced
- Prepare your veggies
